Baked Cranberry Pecan Brie Bites (Easy 20 Mins)

Ingredients
  

Pastry & Cheese Cups:
  • 1 sheet (approx. 8 oz) all-butter puff pastry, thawed but chilled kept cold to ensure crisp puff
  • 8 oz (approx. 225g) wheel of French brie cheese, cut into 24 bite-sized cubes rind left on to hold shape while baking
  • 1 tbsp all-purpose flour for dusting rolling surface
Holiday Cranberry Pecan Topping:
  • 1/2 cup whole berry cranberry sauce (homemade or high quality) 100% Halal and alcohol-free
  • 1/3 cup pecans, finely chopped or walnuts
  • 1/2 tsp orange zest, freshly grated brightens cranberry flavor
  • 1/4 tsp ground cinnamon optional warm spice note
Finishing Glaze & Garnishes:
  • 2 tbsp pure raw honey (or maple syrup) for warm drizzling
  • 2 sprigs fresh rosemary, leaves stripped and finely chopped adds festive herbal aroma
  • 1/4 tsp flaky sea salt (such as Maldon) for delicate finishing crunch

Method
 

Baking Steps:
  1. Preheat oven to 375°F (190°C). Generously grease a 24-cup mini muffin tin with nonstick cooking spray or melted butter.
  2. Lightly dust a clean work surface with flour. Unroll the thawed puff pastry sheet and gently roll with a rolling pin to smooth creases into approximately a 10x14-inch rectangle. Using a pizza cutter or sharp knife, cut into 24 equal squares (4 cuts by 6 cuts).
  3. Press one puff pastry square gently into each mini muffin cup, allowing the corners to point upward above the rim.
  4. Cube the cold brie into 24 small pieces (approx. 3/4-inch each, keeping rind intact). Place one piece of brie into the center of each pastry cup.
  5. Top each piece of brie with 1 heaping teaspoon of whole berry cranberry sauce, then scatter chopped pecans over each cup.
  6. Bake at 375°F for 15 to 18 minutes, or until the pastry corners are puffed and deeply golden-brown and the brie is thoroughly melted and bubbling.
  7. Allow to cool in the pan for 5 minutes (so the melted cheese sets slightly and does not spill). Use a small offset spatula or butter knife to gently lift the warm bites onto a holiday serving platter. Drizzle lightly with warm honey and garnish with fresh rosemary and sea salt flakes. Serve warm!
