A delicious and easy cherry cobbler made with fresh cherries and a buttery biscuit topping.

Ingredients
  

Filling
  • 4 cups fresh cherries pitted and halved
  • 1 cup granulated sugar adjust to taste
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
Topping
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cherries, sugar, cornstarch, vanilla extract, and lemon juice. Mix well and set aside.
Make the Topping
  1. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add the milk and melted butter to the dry ingredients and stir until just combined.
Assemble and Bake
  1. Pour the cherry mixture into a greased baking dish.
  2. Spoon the topping mixture evenly over the cherries.
  3. Bake in the preheated oven for 30-35 minutes or until the topping is golden brown.
Serve
  1. Let the cobbler cool for a few minutes before serving. Enjoy warm, optionally with ice cream.

Notes

For best results, use fresh cherries when in season. Frozen cherries can be used but may require additional thickening.
