Ingredients
  

Fruits
  • 4 cups fresh cherries pitted and halved
Sweeteners
  • 2 cups granulated sugar
Acid
  • 1 tablespoon lemon juice freshly squeezed
Pectin
  • 1 packet fruit pectin optional, for thicker jam

Method
 

Prepare the Cherries
  1. Wash the cherries thoroughly, remove the pits, and halve them.
Cook the Jam
  1. In a saucepan, combine the cherries, sugar, and lemon juice. Stir well.
  2. Cook over medium heat, stirring frequently until the mixture comes to a boil.
  3. If using pectin, add it according to package instructions and boil for an additional 1-2 minutes.
  4. Remove from heat and skim off any foam.
Jar the Jam
  1. Pour the hot jam into sterilized jars using a canning funnel, leaving about 1/4 inch headspace.
  2. Seal the jars with lids and process in a boiling water bath for 5-10 minutes if preserving.

Notes
