Ingredients
  

Salad Base
  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 avocado sliced
Chicken
  • 2 cups cooked chicken breast shredded or diced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Chicken
  1. Grill or bake the chicken breast until fully cooked, about 20 minutes. Let it cool, then shred or dice it.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, minced garlic, salt, and pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, avocado, and cooked chicken.
  2. Drizzle the dressing over the salad and toss gently to combine.
Serve
  1. Divide the salad into bowls and serve immediately.
