Ingredients
  

Chicken Filling
  • 1 lb boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup taco toppings (lettuce, cheese, salsa, etc.) to taste
Taco Shells
  • 8 count corn or flour tortillas

Method
 

Prepare Chicken
  1. Set the Instant Pot to sauté mode and heat the olive oil. Add the chicken breasts and sear for 2-3 minutes on each side until browned.
  2. Add the chicken broth, cumin, chili powder, garlic powder, onion powder, salt, and black pepper to the pot. Stir to combine.
Cook Chicken
  1. Close the lid of the Instant Pot and set it to high pressure for 10 minutes.
  2. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then perform a quick release for any remaining pressure.
Shred and Serve
  1. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir to combine with the juices.
  2. Warm the tortillas in a dry skillet or microwave. Fill each tortilla with the chicken mixture and top with your favorite taco toppings.
