Roasting & Simmering Steps:
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- Arrange halved Roma tomatoes, whole cherry tomatoes, and onion wedges cut-side up across the sheet. Drizzle with 3 tablespoons olive oil, season with sea salt, black pepper, and dried oregano. Drizzle the exposed cut face of the halved garlic head with olive oil, wrap tightly in foil, and tuck into the corner of the sheet.
- Roast at 400°F for 20 to 25 minutes, until the tomatoes are blistered, juicy, and lightly charred along the edges, and the garlic cloves are golden and buttery-soft.
- Transfer all roasted tomatoes, onions, and pan juices into a heavy Dutch oven or stockpot. Squeeze the soft roasted garlic cloves directly out of their skins into the pot.
- Pour in the vegetable broth and add the fresh basil leaves and balsamic glaze. Use an immersion stick blender to puree the soup until completely velvety, silky, and uniform.
- Place the pot over medium-low heat, stir in the heavy cream, and bring to a gentle simmer for 3 to 5 minutes to let the flavors marry. Taste and adjust seasoning with extra sea salt or cracked pepper.
- Ladle into warm ceramic bowls. Swirl with extra cream, a drizzle of olive oil, and fresh basil ribbons. Serve warm alongside crispy, golden sourdough grilled cheese dippers!
