  • 2 cans (15 oz / 425g each) Cannellini white beans, rinsed and drained great northern beans or butter beans also work wonderfully
  • 2 tbsp extra virgin olive oil (or sun-dried tomato oil from jar) using oil from the tomato jar adds incredible concentrated flavor
  • 1/2 cup sun-dried tomatoes in oil, drained and thinly sliced delivers rich umami tanginess
  • 4 cloves garlic, finely minced
  • 1/2 medium yellow onion or shallot, finely diced
Creamy Sauce & Finishing Greens:
  • 1/2 cup low-sodium vegetable broth (or chicken broth) for building a silky sauce consistency
  • 3/4 cup heavy whipping cream (or full-fat coconut milk for dairy-free) creates luxurious velvety body
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese thickens the cream and adds savory nutty depth
  • 3 cups fresh baby spinach leaves, packed wilts gently into the hot skillet
  • 1 tsp dried Italian seasoning (oregano, thyme, rosemary)
  • 1/4 tsp crushed red pepper flakes for subtle warmth
  • 1/2 tsp fine sea salt to taste
  • 1/4 tsp freshly cracked black pepper
  • 1/4 cup fresh basil leaves, chiffonade for bright herbal finish
  • 4 slices crusty sourdough bread, toasted with garlic olive oil for dipping

Method
 

Skillet Cooking Steps:
  1. Aromatize the Aromatics: Heat 2 tablespoons of olive oil (or sun-dried tomato jar oil) in a wide 12-inch heavy cast iron or stainless steel skillet over medium heat. Add diced onion and cook for 3 minutes until soft and translucent. Add minced garlic, sliced sun-dried tomatoes, Italian seasoning, and red pepper flakes. Sauté for 60 seconds until richly fragrant without letting the garlic brown.
  2. Simmer the Beans & Broth: Add the rinsed and drained Cannellini beans along with 1/2 cup vegetable broth. Bring to a gentle simmer for 3 minutes, stirring occasionally. Using the back of your wooden spoon, gently crush about 1/4 of the beans against the bottom of the skillet—this naturally releases starch to thicken your sauce to restaurant quality.
  3. Build the Cream Sauce: Pour in 3/4 cup heavy cream and reduce heat to medium-low. Let simmer gently for 4 to 5 minutes until the sauce slightly reduces and coats the back of a spoon with velvety sheen.
  4. Fold in Cheese & Greens: Remove the pan from direct heat. Stir in the grated Parmigiano-Reggiano cheese until smoothly melted into the sauce. Add fresh baby spinach in two batches, folding gently until the leaves wilt from the residual heat (about 1 to 2 minutes).
  5. Season & Garnish: Season with fine sea salt and freshly cracked black pepper to taste. Scatter fresh basil chiffonade and extra shaved parmesan over top. Drizzle with a swirl of high-quality extra virgin olive oil.
  6. Serve Immediately: Ladle hot into shallow bowls and serve immediately with thick slices of golden toasted garlic sourdough bread for scooping up every drop of rich sauce!
