Ingredients
  

  • 1 lb ground beef
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 28 oz canned diced tomatoes
  • 2 tsp chili powder
  • 1 tsp cumin
  • 8 oz cream cheese, cubed
  • 1 cup shredded sharp cheddar cheese

Method
 

  1. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess grease and transfer to the crockpot.
  2. Sauté the chopped onion and minced garlic in the same skillet until fragrant and translucent. Add to the crockpot.
  3. Stir in canned tomatoes (with juices), chili powder, cumin, salt, and pepper; mix well.
  4. Cube cream cheese and place it on top without mixing it in.
  5. Cover and cook on low for 6 hours or high for 4 hours until flavors meld together.
  6. About 30 minutes before serving, sprinkle shredded cheddar cheese on top to melt before serving.
