Ingredients
  

  • 2 fillets salmon (skin on)
  • salt (to season)
  • pepper (to season)
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 3 cloves garlic (finely diced)
  • 4 oz. roasted red peppers (diced)
  • 4 cups fresh baby spinach
  • ½ cup Half & Half (or heavy cream)
  • ¼ cup grated Parmesan cheese
  • ¼ tsp. red pepper flakes (or to taste)
  • ¼ cup chopped parsley
  • tsp. salt (to taste)
  • ¼ tsp. pepper

Method
 

  1. Season the salmon fillets with salt and pepper.
  2. In a skillet, heat the olive oil and butter over medium heat.
  3. Add the garlic and sauté until fragrant.
  4. Stir in the roasted red peppers and cook for a couple of minutes.
  5. Add the spinach and cook until wilted.
  6. Pour in the Half & Half (or heavy cream) and stir until combined.
  7. Stir in the grated Parmesan cheese and red pepper flakes.
  8. Place the salmon fillets in the skillet and cook until done, about 5-7 minutes per side.
  9. Sprinkle with chopped parsley before serving.
