  • 4 cups fresh broccoli florets
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or coconut milk for dairy-free
  • Salt to taste
  • Pepper to taste

Method
 

  1. Wash and chop broccoli into bite-sized pieces. Dice onion and mince garlic.
  2. Add chopped broccoli, onion, garlic, and vegetable broth to the slow cooker. Season with salt and pepper.
  3. Set on low heat for 4-6 hours or high heat for 2-3 hours until broccoli is tender.
  4. Use an immersion blender or transfer batches to a regular blender until desired creaminess is achieved.
  5. Stir in heavy cream (or coconut milk) into the blended soup.
  6. Ladle into bowls and garnish as desired.
