  • 1/2 cup unsweetened applesauce
  • 1/2 cup non-dairy milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  3. In another bowl, mix the applesauce, non-dairy milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each cupcake liner about two-thirds full with batter.
  6. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cupcakes to cool before frosting.
