Ingredients
  

  • 1 lb Pasta of choice
  • 1 tbsp Salt for boiling water
  • 1 cup Bell peppers sliced
  • 1 medium Zucchini sliced
  • 1 cup Carrots sliced
  • 1 cup Cherry tomatoes halved
  • 2 cups Spinach or kale
  • 3 tbsp Olive oil for sautéing
  • 2 cloves Garlic minced
  • 1/2 cup Parmesan cheese freshly grated

Method
 

  1. Boil water in a large pot and add salt. Cook pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add bell peppers, zucchini, and carrots to the skillet. Sauté until tender.
  4. Add roasted cherry tomatoes and cook for an additional 2 minutes.
  5. Stir in spinach or kale until wilted.
  6. Drain pasta and combine with the vegetable mixture. Toss well.
  7. Serve with freshly grated Parmesan cheese on top.
