  • 6 large eggs hard-boiled
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tablespoon mustard yellow or Dijon
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon fresh dill chopped, optional
  • 8 slices bread whole grain or white
  • 4 leaves lettuce optional
  • 1 whole tomato sliced, optional

Method
 

Egg Salad Preparation
  1. Hard-boil the eggs and let them cool, then peel and chop them.
  2. In a bowl, combine the chopped eggs, mayonnaise (or Greek yogurt), mustard, celery, red onion, salt, pepper, and dill. Mix until well combined.
  3. Toast the bread slices if desired.
  4. Spread the egg salad mixture onto 4 slices of bread. Top with lettuce and tomato if using.
  5. Place the other 4 slices of bread on top to make sandwiches. Cut in half and serve.
