Method
Prepare the Pork
- Trim excess fat from the pork shoulder and pat dry with paper towels.
- In a bowl, mix all dry rub ingredients together. Rub the mixture all over the pork shoulder.
- Wrap the seasoned pork in plastic wrap and refrigerate for at least 1 hour, preferably overnight.
Smoke the Pork
- Preheat the electric smoker to 225°F (107°C).
- Add soaked wood chips to the smoker's tray.
- Place the pork shoulder in the smoker and close the door.
- Smoke for about 4-6 hours, or until the internal temperature reaches 195°F (90°C).
- Once done, remove the pork from the smoker and wrap it in aluminum foil. Let it rest for 30 minutes.
Serve
- Shred the pork using two forks and mix with barbecue sauce.
- Serve on buns, tacos, or as desired.
