Fish
  • 4 fillets salmon skinless
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil for grilling
Salad Base
  • 4 cups kale chopped and stems removed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 cup red onion thinly sliced
Dressing
  • 3 tablespoons lemon juice freshly squeezed
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil for dressing

Method
 

Cooking Fish and Salad
  1. Preheat the grill and brush the salmon fillets with olive oil and Cajun seasoning.
  2. Grill the salmon fillets for about 5-7 minutes on each side, or until cooked through.
  3. In a large bowl, combine the chopped kale, cherry tomatoes, cucumber, and red onion.
  4. In a small bowl, whisk together the lemon juice, honey, Dijon mustard, and olive oil to make the dressing.
  5. Flake the grilled salmon and add it to the salad.
  6. Drizzle the dressing over the salad and toss gently to combine.
