  • 1 cup cherry tomatoes halved
  • 1/2 medium red onion finely diced
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons fresh lime juice squeezed

  • Pepper to taste

Method
 

Preparation
  1. If using fresh corn, husk the cobs and remove silk strands. Boil in water for 5-7 minutes until tender; cool under cold water. For frozen corn, thaw according to package instructions.
  2. Chop cherry tomatoes in half and finely dice the red onion.
  3. In a large mixing bowl, combine cooled corn (cut off kernels from cobs if used), cherry tomatoes, diced red onion, and chopped cilantro.
  4. Drizzle with freshly squeezed lime juice and season with salt and pepper to taste.
  5. Mix well until all ingredients are combined. Serve immediately with tortilla chips or alongside grilled meats.
