Ingredients
  

  • 1 lb fresh salmon fillets
  • 1 cup plain or seasoned breadcrumbs
  • 2 large eggs
  • ¼ cup chopped fresh parsley or dill
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 2 tbsp olive oil for frying
  • tartar sauce for serving

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Steam or poach the salmon fillets until they flake easily with a fork (about 10-15 minutes). Let cool slightly before shredding.
  3. In a large bowl, combine shredded salmon, breadcrumbs, parsley, lemon juice, garlic powder, eggs, salt, and pepper. Mix gently until combined.
  4. Shape the mixture into small patties (about 6-8).
  5. Heat olive oil in a non-stick skillet over medium heat. Fry each patty for about 4 minutes on each side until golden brown.
  6. Serve with tartar sauce and garnish with lemon wedges or fresh herbs.
