Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lime juiced
Taco Assembly
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup fresh cilantro chopped

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, cumin, paprika, garlic powder, salt, black pepper, and lime juice. Add the chicken breasts and coat well. Marinate for at least 30 minutes.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
Prepare Tacos
  1. Once the chicken is cooked, let it rest for a few minutes before slicing it into thin strips. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Assemble the tacos by placing sliced chicken on each tortilla and topping with shredded lettuce, diced tomatoes, sour cream, shredded cheese, and cilantro.
