Ingredients
  

Chicken Marinade
  • 4 pieces chicken breasts boneless and skinless
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup brown sugar packed
  • 1/4 cup pineapple juice fresh or canned
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon vegetable oil
Pineapple Sauce
  • 1 cup pineapple chunks fresh or canned
  • 1/4 cup brown sugar packed
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 tablespoon soy sauce low sodium preferred

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, brown sugar, pineapple juice, garlic, ginger, and vegetable oil. Mix well.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
Prepare the Pineapple Sauce
  1. In a small saucepan, combine pineapple chunks, brown sugar, cornstarch, water, and soy sauce.
  2. Cook over medium heat, stirring until the mixture thickens and bubbles. Remove from heat and set aside.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove chicken from marinade and discard the marinade.
  2. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Serve
  1. Serve the grilled chicken topped with the pineapple sauce. Enjoy!
