  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 tablespoon olive oil
Salsa
  • 1 cup fresh pineapple, diced
  • 1 medium jalapeño, seeded and minced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1/4 teaspoon salt
Tacos
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 whole avocado, sliced

Cooking Steps
  1. In a bowl, combine soy sauce, honey, garlic powder, ground ginger, and olive oil. Add chicken thighs and marinate for at least 15 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes on each side, or until cooked through. Remove from heat and let rest.
  3. In a separate bowl, mix together fresh pineapple, jalapeño, red onion, cilantro, lime juice, and salt to make the salsa.
  4. While the chicken rests, warm the corn tortillas in a dry skillet for about 30 seconds on each side.
  5. Slice the cooked chicken and assemble the tacos by placing chicken, lettuce, avocado, and salsa on each tortilla. Serve immediately.
