Instant Pot Refried Beans

Ingredients
  

Beans
  • 1 cup dried pinto beans rinsed and sorted
  • 4 cups water
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon cumin optional
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 jalapeño pepper seeded and chopped, optional

Method
 

Cooking the Beans
  1. Set the Instant Pot to sauté mode. Add olive oil and heat.
  2. Add chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and jalapeño, cooking for another minute.
  4. Add rinsed pinto beans, water, salt, and cumin to the pot.
  5. Close the lid, set the valve to sealing, and cook on high pressure for 30 minutes.
  6. Once cooking is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
Mashing the Beans
  1. Open the lid and stir the beans. Use a potato masher or fork to mash to desired consistency.
  2. If the mixture is too thick, add a little water to reach the desired creaminess.
  3. Taste and adjust seasoning if necessary.
