Cooking the Beans
- Set the Instant Pot to sauté mode. Add olive oil and heat.
- Add chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and jalapeño, cooking for another minute.
- Add rinsed pinto beans, water, salt, and cumin to the pot.
- Close the lid, set the valve to sealing, and cook on high pressure for 30 minutes.
- Once cooking is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
Mashing the Beans
- Open the lid and stir the beans. Use a potato masher or fork to mash to desired consistency.
- If the mixture is too thick, add a little water to reach the desired creaminess.
- Taste and adjust seasoning if necessary.
