Lemon Herb Orzo Pasta

Ingredients
  

Pasta
  • 1 cup orzo pasta uncooked
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 1 medium zucchini diced
Herbs and Seasoning
  • 1 tablespoon olive oil extra virgin
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh basil chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice freshly squeezed
  • to taste salt
  • to taste black pepper

Method
 

Cook the Orzo
  1. Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente.
  2. Drain the orzo in a colander and rinse under cold water to stop the cooking process.
Prepare the Vegetables
  1. In the same pot, add olive oil over medium heat. Add the zucchini and sauté for about 3-4 minutes until slightly tender.
  2. Add the cherry tomatoes and spinach, cooking until the spinach wilts, about 2 minutes.
Combine and Serve
  1. Add the cooked orzo to the pot with the vegetables. Stir in the lemon zest, lemon juice, parsley, basil, salt, and pepper. Mix well to combine.
  2. Serve warm or at room temperature, garnished with additional herbs if desired.

Notes
