Ingredients
  

Salad Ingredients
  • 4 ears corn grilled and kernels removed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 lime juice freshly squeezed
Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Corn
  1. Preheat the grill to medium-high heat. Grill the corn for about 10 minutes, turning occasionally, until charred. Remove from grill and let cool slightly before cutting the kernels off the cob.
Mix the Salad
  1. In a large mixing bowl, combine the grilled corn kernels, cherry tomatoes, cucumber, red onion, and cilantro.
Prepare the Dressing
  1. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the salad mixture and toss until everything is well coated. Adjust seasoning if necessary.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld. Enjoy!
