Pollo con Tajadas Honduras

Ingredients
  

Chicken Marinade
  • 4 pieces Chicken thighs Bone-in, skin-on
  • 2 cloves Garlic Minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoons Vegetable oil For marinating
Fried Plantains
  • 2 large Green plantains Peeled and sliced
  • 1 cup Vegetable oil For frying
  • 1 teaspoon Salt For seasoning

Method
 

Marinate the Chicken
  1. In a large bowl, combine minced garlic, cumin, paprika, salt, black pepper, lemon juice, and vegetable oil. Add the chicken thighs and coat well. Cover and marinate for at least 30 minutes.
Fry the Chicken
  1. Heat a frying pan over medium heat with a little vegetable oil. Add the marinated chicken and cook for about 25-30 minutes, turning occasionally, until golden brown and cooked through.
Prepare the Plantains
  1. While the chicken is cooking, heat the vegetable oil in another frying pan. Fry the sliced plantains for about 3-4 minutes on each side until golden and crispy. Remove and drain on paper towels. Sprinkle with salt.
Serve
  1. Serve the fried chicken hot alongside the crispy fried plantains.
