Ingredients
  

Shortcake Biscuits
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup heavy cream plus more for brushing
Strawberry Topping
  • 2 cups fresh strawberries sliced
  • 1/4 cup granulated sugar for macerating
Whipped Cream
  • 1 cup heavy cream chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

Prepare Strawberries
  1. In a bowl, combine sliced strawberries with granulated sugar and let them sit for about 15 minutes to macerate.
Make Shortcake Biscuits
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined.
  5. Turn the dough onto a floured surface and gently knead it a few times. Pat into a 1-inch thick round.
  6. Cut into rounds and place on a baking sheet. Brush the tops with additional cream.
  7. Bake for 12-15 minutes or until golden brown.
Make Whipped Cream
  1. In a mixing bowl, beat the chilled heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assemble Shortcakes
  1. Slice the baked shortcake biscuits in half horizontally.
  2. Layer the bottom half with macerated strawberries and a dollop of whipped cream.
  3. Top with the other half of the biscuit and serve immediately.

Notes
