  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter melted
  • 0.25 cups granulated sugar
Filling
  • 16 oz cream cheese softened
  • 1 cups sour cream
  • 2 tsp vanilla extract
  • 3 large eggs
  • 0.5 cups granulated sugar
Topping
  • 2 cups fresh strawberries sliced

Preparation
  1. Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, melted butter, and ¼ cup sugar. Press firmly into the bottom of a springform pan.
  2. Beat the cream cheese in a large bowl until smooth. Gradually add the remaining sugar until fluffy. Mix in the sour cream and vanilla extract, then incorporate the eggs one at a time.
  3. Pour the filling over the crust and spread evenly. Bake for 50-60 minutes until the edges are set.
  4. Turn off the oven and let the cheesecake cool with the door ajar for about an hour. Refrigerate for at least four hours before serving.
  5. Top with sliced strawberries before slicing and enjoying.
