Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 cup whole milk
  • 1/3 cup unsalted butter (melted)
  • 1 large egg
  • 1 cup fresh strawberries (diced)

Method
 

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with nonstick spray.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In another bowl, mix the milk, melted butter, and egg until well combined.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined—lumps are okay!
  5. Carefully fold in the diced strawberries.
  6. Spoon batter into muffin tin, filling about two-thirds full. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
