Ingredients
  

Berries and Cream
  • 2 cups fresh mixed berries such as strawberries, blueberries, and raspberries
  • 2 cups heavy whipping cream for whipping
  • 1 cup vanilla pudding instant mix or homemade
  • 1 cup sponge cake cut into cubes
  • 5 mint leaves for garnish

Method
 

Preparation
  1. Wash the berries thoroughly and slice the strawberries.
  2. In a large bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract until stiff peaks form.
  3. Prepare the vanilla pudding according to package instructions in a separate bowl.
  4. In a trifle dish or glass bowl, layer sponge cake cubes at the bottom, followed by a layer of pudding and then whipped cream.
  5. Top with a handful of mixed berries. Repeat the layers until you reach the top of the dish.
  6. Cover and refrigerate for at least one hour before serving. Garnish with additional whipped cream and mint leaves.
