Ingredients
  

Grilled Lemon Herb Chicken
  • 4 pieces chicken breasts boneless and skinless
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Quinoa Salad
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup parsley chopped
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Berry Dessert
  • 2 cups mixed berries strawberries, blueberries, raspberries
  • 1/4 cup honey or maple syrup
  • 1 cup Greek yogurt plain
  • 1 teaspoon vanilla extract

Method
 

Grilled Lemon Herb Chicken
  1. In a mixing bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  2. Add chicken breasts to the marinade and let sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat and grill chicken for 6-7 minutes on each side or until cooked through.
Quinoa Salad
  1. In a saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  2. Fluff quinoa with a fork and let cool.
  3. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  4. Drizzle with lemon juice and olive oil, season with salt and pepper, and toss to combine.
Berry Dessert
  1. In a bowl, mix the berries with honey and let sit for 10 minutes.
  2. In serving glasses, layer Greek yogurt and the berry mixture.
  3. Drizzle with vanilla extract and serve chilled.
