  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup cooked shredded chicken or black beans
  • 1 cup sliced bell peppers mixed colors
  • 1/2 cup sliced red onion
  • 1 tsp ground cumin
  • 1 tsp chili powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, mix together the shredded chicken or beans, bell peppers, onions, cumin, and chili powder until combined.
  3. Lay half of the tortillas on the baking sheet and evenly distribute the filling mixture over them. Top with shredded cheese.
  4. Place the remaining tortillas on top of the filled ones and gently press down.
  5. Bake for 15-20 minutes or until the tortillas are golden brown and crispy.
  6. Let cool slightly before slicing into wedges. Serve warm with salsa or guacamole.
