Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Sauce
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup broccoli florets
  • 2 cloves garlic minced
  • 1 inch ginger grated
Garnish
  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the chicken pieces with sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Let marinate for at least 10 minutes.
Cook the Chicken
  1. Heat a skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes.
Add Vegetables
  1. Add the bell pepper, broccoli, garlic, and ginger to the skillet. Stir-fry for an additional 5-7 minutes until the vegetables are tender.
Serve
  1. Garnish with chopped green onions and sesame seeds. Serve hot over rice or noodles.
