Ingredients
  

Meat and Beans
  • 1 lb Ground Beef or turkey
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 packet Taco Seasoning
Casserole Layers
  • 2 cups Tortilla Chips crushed
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Sour Cream
  • 1 cup Salsa
Toppings
  • 1 cup Lettuce shredded
  • 1 medium Tomato diced
  • 1/2 cup Olives sliced

Method
 

Prepare the Meat
  1. Preheat the oven to 350°F (175°C). In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning, black beans, and corn to the skillet. Stir well and cook for an additional 5 minutes.
Assemble the Casserole
  1. In a baking dish, layer half of the crushed tortilla chips.
  2. Spread half of the meat mixture over the chips, followed by half of the sour cream and salsa.
  3. Repeat the layers, finishing with the shredded cheddar cheese on top.
Bake
  1. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes. Top with lettuce, diced tomato, and olives before serving.
