Ingredients
  

For the Tuna
  • 1 lb sushi-grade tuna cut into cubes
  • 3 tbsp soy sauce low sodium preferred
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey optional
  • 1 tsp sriracha optional for spice
For the Rice
  • 2 cups sushi rice or jasmine rice
  • 2 cups water
Toppings
  • 1 cup edamame shelled
  • 1 cup cucumber sliced
  • 1 avocado sliced
  • 1 cup carrots shredded
  • 1 tbsp sesame seeds for garnish
  • 2 green onions sliced for garnish

Method
 

Prepare the Rice
  1. Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.
Marinate the Tuna
  1. In a mixing bowl, combine soy sauce, sesame oil, rice vinegar, honey, and sriracha. Add the cubed tuna and gently toss to coat. Let it marinate for about 10 minutes.
Assemble the Bowl
  1. Once the rice is cooked, divide it among four bowls. Top each bowl with the marinated tuna, edamame, cucumber, avocado, and carrots.
  2. Garnish with sesame seeds and sliced green onions. Serve immediately.
