Whipped Creamy Cheese Base:
  • 8 oz (225g) fresh goat cheese (chèvre) softened to room temperature
  • 4 oz (115g) brick cream cheese softened; lends rich spreadability
  • 1 tbsp pure raw wildflower honey for whipping into cheese
  • 1 tsp fresh orange zest finely grated for bright citrus aroma
  • 1/4 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
Warm Cranberry Pecan Topping:
  • 1 1/2 cups fresh or frozen whole cranberries
  • 1/3 cup pure raw honey plus extra for finishing drizzle
  • 2 tbsp fresh orange juice enhances natural tartness
  • 1/2 cup pecan halves, roughly chopped and toasted
  • 1 tbsp fresh rosemary leaves, finely minced
  • 1 pinch flaky Maldon sea salt for garnish

Method
 

Preparation & Baking Steps:
  1. Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a shallow 8-inch round ceramic baking dish or cast iron skillet with olive oil or butter.
  2. Whip the Cheese Base: In a medium mixing bowl or food processor, combine softened goat cheese, cream cheese, 1 tablespoon honey, orange zest, sea salt, and black pepper. Beat with a hand mixer or pulse until completely smooth, light, and creamy.
  3. Spread in Baker: Spread the whipped cheese mixture evenly into the bottom of the prepared ceramic baking dish, smoothing the top with an offset spatula.
  4. Simmer the Cranberry Glaze: In a small saucepan over medium heat, combine whole cranberries, 1/3 cup honey, and orange juice. Simmer gently for 4 to 5 minutes, stirring occasionally, until cranberries begin to burst and release their ruby juices into a thick, glossy syrup. Remove from heat.
  5. Top the Cheese: Fold toasted chopped pecans and half of the minced rosemary into the warm cranberry glaze. Spoon the warm cranberry-pecan mixture over the whipped goat cheese in the baking dish.
  6. Bake to Bubbling Perfection: Bake at 400°F for 10 to 12 minutes until the edges of the cheese are gently bubbling and lightly caramelized.
  7. Garnish & Serve: Remove from the oven. Drizzle with an extra tablespoon of warm honey, sprinkle with remaining fresh minced rosemary, and finish with a pinch of flaky sea salt. Serve immediately with warm toasted baguette crostini, water crackers, and crisp apple slices!
