Ingredients
  

Salad Ingredients
  • 4 cups watermelon diced
  • 2 cups cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh mint chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey optional

Method
 

Prepare the Ingredients
  1. Dice the watermelon and cucumber into bite-sized pieces.
  2. Finely chop the red onion and fresh mint.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
Combine and Serve
  1. In a large mixing bowl, combine the watermelon, cucumber, red onion, feta cheese, and mint.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Serve immediately or chill in the refrigerator for 30 minutes before serving.
