Ingredients
  

Casserole Base
  • 4 cups yellow squash, sliced about 2 medium squash
  • 1 cup onion, chopped yellow or white onion
  • 1 cup sharp cheddar cheese, shredded for flavor
  • 1 cup sour cream can substitute with Greek yogurt
  • 2 large eggs beaten
Topping
  • 1 cup bread crumbs preferably seasoned
  • 2 tablespoons butter, melted
  • 1/2 cup parmesan cheese, grated for extra flavor

Method
 

Prepare the Squash
  1. Preheat the oven to 350°F (175°C). In a skillet, sauté the onions until translucent. Add the sliced yellow squash and cook until tender, about 5-7 minutes.
Mix the Casserole
  1. In a mixing bowl, combine the cooked squash and onions with the shredded cheddar cheese, sour cream, and beaten eggs. Mix well.
Prepare the Topping
  1. In a separate bowl, mix the bread crumbs, melted butter, and grated parmesan cheese until well combined.
Assemble and Bake
  1. Pour the squash mixture into a greased baking dish. Sprinkle the breadcrumb topping evenly over the casserole. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
