Ingredients
  

Vegetables
  • 2 medium zucchini sliced
  • 2 medium yellow squash sliced
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
Seasoning
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Method
 

Preparation
  1. Wash and slice the zucchini and yellow squash into thin rounds. Slice the bell pepper and onion.
Cooking
  1. Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute.
  2. Add the sliced onion and bell pepper to the skillet and cook for 3-4 minutes until softened.
  3. Add the zucchini and yellow squash, salt, black pepper, and oregano. Stir-fry for another 5-6 minutes until the vegetables are tender but still crisp.
  4. Remove from heat and serve immediately.
